Kelpie Jerky
Cook Time:
4-6 hours, depending on meat type, thickness, and desired consistency
Servings:
10-15 strips per chicken breast
Level:
Easy
Ingredients
This recipe uses boneless chicken breasts. You can substitute other meats, but be sure to adjust the baking time as needed to ensure the meat is fully cooked and dehydrated.
(Optional): 1/4 teaspoon turmeric
(Optional): 2 basil leaves
2 boneless chicken breasts

Preparation
1. Preheat oven to 170°F (76.7°C)
2. Slice the meat horizontally cut the boneless meat into very thin, flat pieces (no more than ½ inch thick). Then, slice the thin pieces vertically into long, jerky-shaped strips
3. Arrange the jerky by placing the strips directly on a wire rack to enhance air circulation for better drying (baking on a baking sheet also works, but it won’t get as dried out). *Season the strips, if desired
4. Bake for 2-3 hours on each side, flipping halfway
5. Check for doneness; jerky is ready when it is firm, dry, and bends slightly without breaking
